IN THE VINEYARD:

Vineyard: Southbrook’s estate vineyard (Demeter
Certified)
Harvested: Oct. 15 and 19, 2008
Brix at harvest: 22.3° and 22.5° respectively
IN THE WINERY:
Grapes were hand harvested from our biodynamic estate vineyard and rigorously hand sorted, selecting superior fruit. Half the destemmed berries were left to ferment whole, while the other half was gently crushed. Indigenous yeasts were employed in stainless steel and gentle delestage - cap management - was done three times per day. Elevage took place in French and American oak (59% French cooperage and 41% neutral American barrels - 41% of the oak used was new) for nine months.

IN THE GLASS:
This is a biodynamic wine, so consider its energy when tasting. This ruby red wine displays the fruit of fresh cherries and sweet cedar against a background of lavender and thyme. On the palate, it is round but not heavy, and full flavoured with a long, fresh finish. Ripe, juicy red fruit flavours are shaped by food-friendly acidity. Look for developing richness and intensity for three to five years. |

This is Canada’s first Demeter Certified biodynamic red wine. It’s a slim, fairly delicate and fresh little number with nicely ripened raspberry fruit and well integrated tobacco, herbs and wood spice. Nicely balanced with firm acidity and fine tannin. Very good to excellent length.
