IN THE WINERY:
After whole cluster pressing, 41% of the juice was chilled and
batonnaged on its fine grape sediment for two weeks in stainless
steel to increase mouthfeel and aromatics. The other 59% was
fermented and aged in French oak (24% new, 35% second fill)
with lees contact for five months. The final result is a blend of the
two components.

IN THE GLASS:
Fresh green apple, passion fruit and lime notes greet the nose.
Clean and crisp on the palate, with green apple, peach pie and
minerality. The barrel time rounds out the edges for great mouth
feel. Give this wine a chance to open up as it evolves wonderfully and becomes more complex. |

This shows a classic nose of smoke, lime, nettles and green pear. It’s light to mid-weight, zesty and very tart with excellent focus and length. Loads of lime. A bit austere so tee it up with food, perhaps salad greens.
