Made from 50% merlot, with 25% cab franc, 25% cab sauvignon with grapes air-dried after harvest to reach 27Brix. Which accounts for a ripeness mindful of blackcurrant and juniper fruit rare in Niagara cabernet. There is also some acetone consistent with the air-drying process and often found in amarone. Barrel ageing has kicked in leathery, meaty notes. It’s a full bodied, intense, quite dense, tart and sinewy red crammed with flavour. Excellent length. Cellar it for at least three years.
