| At this point in its evolution it will go very well grilled, and buttered shrimp or the classic oysters on the half shell, as it matures it will move over to roasted garlic-chicken.

| Description |
Ripe yellow fruit on the nose with oak, vanilla and floral notes. The palate is rich with flavours of melon, pear and ripe citrus on the finish with a lovely nutmeg spice note. The wine has great texture with a creaminess that is balanced with acidity giving a very a long finish.
Vintage Conditions:
Spring was cool but dry and bud break was a little later than average. This cool soon gave way to warm weather with lots of sun. The summer was hot and dry with drought stress becoming evident in August. Fall was warmer than average with only a few days of rain.
Vinification:
Harvested by hand, in perfect condition. Vines age from 6 to 30 years. After pressing the grapes, the juice was cold settled for 4 days before transfer to small French Oak barrels where selected yeast was used to ferment. Temperature in the cellar was cool providing a long gentle ferment. After fermentation, the wine was left on its lees for 8 months with batonage done every two weeks. The wine was racked from barrel after 9 months and was filtered before bottling.

This is taut, well integrated, subtle chardonnay, but not immediately well defined on the nose. There is a dried wood, forest floor scent with vague, honey and dried fruit. It's mid-weight, quite smooth and powerful with firm acidity and alcohol. Best 2009 to 2012.
