Grape Varieties: 50% Merlot, 25% Cabernet Franc, 25% Cabernet Sauvignon

Winemaking Notes: Grapes hand harvested at the peak of ripeness by our oenologists then air dried for a period of three weeks to a Brix level of 27.0°. Juice and skins subsequently roto-fermented at between 28°-30°C for 12 days using F10 yeast strain. Wine underwent malolactic fermentation during barrel maturation. Aged for one year in 225 litre French-American hybrid oak barrels subjected to medium toast. Additional aging for a period of one year in 225 litre French oak casks subjected to medium toast prior to bottling.

Tasting Notes: Magnotta’s ENOTRIUM is the first Amarone inspired VQA red to be produced. This impressive wine is remarkably concentrated and shows great complexity and structure. Cassis, blackberry and dark plum are at the heart of the deep aromatic core that includes combined spice notes of vanilla, cinnamon, cloves and white pepper. Rich and mouth filling with a superb balance of alcohol, acidity and tannin.

Appearance: Deep ruby / garnet with bluish hints

Cellaring Potential: 5-10 years under ideal conditions

From start to finish this pricy blend of merlot (50%) cab franc and cab sauvignon is impressive yet uncharacteristic for Ontario. The style here is very ripe and lush; more warm climate than cool; perhaps due to amarone-inspired production technique of “painstakingly air drying” the grapes before fermentation, as explained on the Magnotta website. It shows very deep colour. The nose is rich, with coffee, currant, mint and coconut. Full, sweet, warm, dense and spicy on the palate. Excellent length.
